A classic example of super early harvest Picual. Dominant green fruit characteristics include: Green Olive, Green Tea, Tomato Leaf and Bitter Herb. Please note the highlighted chemistry below. This particular olive oil contains a high amount of healthful MUFA (Oleic) as well as high phenol content. It also has very low markers for oxidation. The excellent chemistry makes this oil ideal for cooking as it will help to buffer the degradation from heat or consuming raw as a nutraceutical.
